This is always a winner at our house, whether for lunch or dinner. The below quantity serves 2-3 adults.

Oregano grilled chicken breast:

  • 2 chicken breasts (skinless, boneless)
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon sea salt
  • a sprinkle of black pepper

First pound the chicken breasts until tender and about 1/4 of an inch thick. Then marinate them for 30 minutes in the ingredients listed above. After preheating the oven to 375 degrees, grill (I keep a cast iron grill in our oven at all times) or bake the marinated chicken for about 10 minutes on each side (20 minutes total).

Serve the chicken on a bed of butter lettuce and top with fresh tomatoes & avocado. Finish with a pinch of coarse sea salt. Delicious!
