healthy recipe

This crowd pleaser has ‘wowed’ everyone from my foodie friends to finicky guests, and this weekend it passed the ultimate test: a picky 4 year old reluctant to try new foods asked for seconds!

Creamy cocoa mousse presents itself as a decadent dessert, but it is secretly packed with powerful nutrients and perfect for all 3 phases of the postnatal nutrition plan. Prior to garnishing with blackberries, a serving  delivers only 8g carbohydrate. It’s also full of nutrients excellent for pregnancy: cultured, full fat dairy (rich in vitamins A & D + probiotics), low in sugar, and when topped with blackberries it provides an excellent source of antioxidants & fiber.

Satisfying, nutritious and truly delicious!

Creamy cocoa mousse (serves 4)

  • 1 cup full fat sour cream
  • ½ cup mascarpone
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon all natural maple syrup or rapadura (unrefined) sugar
  • 4 teaspoons cocoa powder (unsweetened)
  • a sprinkle of cinnamon
  • Fresh blackberries to garnish

Stir together sour cream, mascarpone, vanilla, maple syrup and cocoa in a mixing bowl. Can be served immediately or refrigerated.

When ready to serve, stir well before spooning into serving bowls. Top each serving with a sprinkle of cinnamon and garnish with fresh blackberries. Enjoy!
