This is always a hit at our house: butter lettuce leaves filled with homemade chicken salad! It’s a little different each time, depending on what we have on hand. I simply mix together some variation of the following ingredients:

  • 8-10 ounces grilled chicken breast/roasted chicken (a great use of leftovers)
  • 1 large carrot, chopped
  • 2 large celery sticks, chopped
  • 1/4 red onion, raw
  • 1/2 small apple, chopped (or a handful of red grapes, halved)
  • 2-4 tablespoons of mayonnaise or Greek yogurt
  • 1 tsp garlic powder
  • 2 tsp curry powder
  • coarse sea salt & pepper to taste
  • a sprinkle of mixed nuts
  • sliced avocado and fresh veggies to garnish

The above quantity serves 2 adults. I often double it to cover two days of easy lunches for our family – always saves time to prepare food ahead when possible! This meal offers a great combination of hearty protein, healthy fats, salty crunch, and a touch of sweetness. A satisfying summer meal that will keep you going for hours, even on a very active day.
