One of my favorite things about summer is the abundance and variety of fresh, local produce and the intense quality of foods such as free range eggs! There is a notable difference (deep yellow-orange yolks!) when those chickens can actually run around outside eating grass, bugs, worms and other nutritious tidbits.

Here’s a lunch I tossed together with all fresh, local vegetables + turkey and avocado to round it out:

  • Yellow tomato (1 small, sliced)
  • Red bell pepper (1/3 of large, sliced)
  • Crunchy garden cucumber (1 small, sliced)
  • Scallions (3 whole, ready to dip in sea salt!)
  • Roasted turkey breast (4.5 oz.)
  • avocado (1/3, sliced)
  • A squeeze of fresh lime
  • Drizzle of oilve oil
  • 2 pinches of sea salt
  • Fresh ground black pepper

The freshness of each ingredient makes this simple, low-prep (no-cook) meal a culinary delight. Each element offers its own unique flavor, texture, acidity, richness, color, and satisfaction. So simple and quick, yet so healthy and delicious.

Step out to your local farmer’s market this week! Or choose local produce at the nearby supermarket.
